  • 1½ cups all-purpose flour (or gluten-free flour blend)
  • ½ tsp salt
  • ½ cup cold unsalted butter, cubed (or vegan butter)
  • 3–4 tbsp ice water

For the Filling:
  • 2 medium zucchinis, grated and lightly squeezed to remove moisture
  • 4 large eggs (or flax eggs for vegan: 4 tbsp ground flaxseed + 12 tbsp water)
  • ½ cup whole milk (or plant-based milk like almond or oat)
  • ½ cup heavy cream (optional, for richness; can substitute with coconut milk or omit)
  • ½ cup shredded Swiss cheese, cheddar, or goat cheese
  • ¼ cup chopped fresh herbs (like parsley, dill, or chives)
  • Salt and black pepper to taste
  • Pinch of nutmeg (enhances flavor)
  • Optional: diced onions, cherry tomatoes, or spinach

Directions

  1. Preheat Oven:

    • Preheat oven to 375°F (190°C).
  2. Prepare the Crust (if homemade):

    • Add ice water one tablespoon at a time until dough comes together.
    • Press into a pie dish and chill while preparing filling.
  3. Make the Filling:

    • In a large bowl, whisk eggs, milk, and cream (if using).
    • Stir in grated zucchini, cheese, herbs, salt, pepper, and nutmeg.
    • Add optional veggies if desired.
  4. Assemble & Bake:

    • Pour the egg mixture into the prepared crust.
    • Bake for 35–40 minutes or until center is set and top is golden brown.
