For the Pasta:
  • 1 lb elbow macaroni or any short pasta shape
  • Salt (for boiling water)

For the Cheese Sauce:
  • 4 tbsp unsalted butter (or vegan butter for dairy-free option)
  • ¼ cup all-purpose flour (or cornstarch for gluten-free)
  • 2 cups whole milk (or plant-based milk like cashew or oat)
  • 2 cups shredded smoked gouda cheese
  • ½ cup grated sharp cheddar cheese (optional, for extra flavor)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp paprika
  • Salt and black pepper to taste
  • Pinch of nutmeg (optional, enhances cheese flavor)
Optional Topping:
  • Breadcrumbs or panko
  • Extra shredded smoked gouda
  • Chopped fresh parsley or chives
  • Crispy bacon bits or breadcrumbs for texture

Directions

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil.
    • Add pasta and cook until al dente (about 8–10 minutes). Drain and set aside.
  2. Make the Cheese Sauce:

    • In a saucepan over medium heat, melt butter.
    • Whisk in flour to make a roux; cook for 1–2 minutes without browning.
    • Gradually whisk in milk and continue stirring until the mixture thickens and comes to a gentle simmer.
  3. Add the Cheese:

    • Remove from heat and gradually stir in smoked gouda and cheddar (if using) until melted and smooth.
    • Stir in garlic powder, onion powder, paprika, nutmeg, salt, and pepper.
  4. Combine Pasta & Sauce:

    • Add cooked pasta to the cheese sauce and stir until evenly coated.
  5. Bake (Optional):

    • Transfer to a greased baking dish. Top with breadcrumbs and more cheese if desired.
    • Bake at 375°F (190°C) for 15–20 minutes until golden and bubbly.
  6. Serve:

    • Garnish with herbs or crispy toppings and serve warm.
