Ingradients

  • 3 cups (375g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp ground ginger
  • 1½ tsp ground cinnamon
  • ½ tsp ground cloves
  • ¼ tsp nutmeg (optional, for warmth)
  • ¾ cup (170g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • ½ cup (100g) packed brown sugar
  • ⅓ cup (80ml) unsulphured molasses (not blackstrap)
  • 1 large egg
  • 1 tsp pure vanilla extract
  • ¼ cup granulated sugar (for rolling)

Directions

  1. Mix Dry Ingredients:

    • In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg. Set aside.
  2. Cream Butter & Sugars:

    • In a large bowl, beat softened butter, granulated sugar, and brown sugar with a mixer for 2–3 minutes until light and fluffy.
  3. Add Wet Ingredients:

    • Beat in molasses, egg, and vanilla until smooth and well combined.
  4. Combine:

    • Gradually add dry ingredients to wet, mixing on low until just combined. Do not overmix.
    • Cover and chill dough for 30 minutes (optional but helps prevent spreading).
  5. Preheat Oven:

    • Preheat oven to 350°F (175°C).
    • Line baking sheets with parchment paper.
  6. Shape & Roll:

    • Scoop dough into 1-inch balls (about 1.5 tbsp each).
    • Roll each ball in granulated sugar to coat.
  7. Bake:

    • Place cookies 2 inches apart on baking sheets.
    • Bake 10–12 minutes, until edges are set and tops are cracked.
    • Centers will still look soft — they firm up as they cool.
  8. Cool & Store:

    • Let cool on baking sheet for 5 minutes, then transfer to wire racks.
    • Store in an airtight container for up to 1 week, or freeze for up to 3 months.
