Ingradients

For the Sandwiches:
  • 12 slices rye bread (thin or regular), crusts trimmed
  • 1 cup (about 8 oz) corned beef, thinly sliced or chopped
  • 1 cup sauerkraut, well-drained and lightly squeezed
  • 6 slices Swiss cheese, halved to make 12 squares
  • 3 tbsp butter, softened
  • 3 tbsp mayonnaise
  • 2 tbsp Russian dressing or Thousand Island dressing

  • Fresh dill fronds

Directions

  1. Preheat Oven & Prepare Pan:

    • Preheat oven to 375°F (190°C).
    • Lightly grease a muffin tin or use a mini cast-iron skillet.
  2. Prepare the Spread:

    • In a small bowl, mix softened butter, mayonnaise, and Russian dressing. Set aside.
  3. Assemble the Mini Reubens:

    • Lay out 6 slices of rye bread and place them into the muffin cups (they should fit like little bowls).
    • Layer each with:
      • 1 tablespoon corned beef
      • 1 tablespoon sauerkraut
      • 1 square of Swiss cheese
    • Top with the remaining 6 slices of bread.
  4. Seal & Bake:

    • Use a rolling pin or your hands to gently press the top bread down.
    • Brush the tops lightly with the butter-mayo-dressing mixture.
    • Bake for 8–10 minutes, until golden brown and cheese is melted.
  5. Serve:

    • Carefully remove from the tin using a spoon or spatula.
    • Slice each in half or serve whole as appetizers.
    • Garnish with dill or a sprinkle of paprika if desired.
