Ingradients

For the Marinade:
  • 1.5 kg chicken thighs or drumsticks (skin on or off, as preferred)
  • 6 cloves garlic, minced
  • 2 shallots, chopped
  • 2 cm ginger, grated
  • 2 cm turmeric root, grated (or 1 tsp ground turmeric)
  • 1 tbsp kecap manis (Indonesian sweet soy sauce) or regular soy sauce
  • 1 tbsp fish sauce (optional)
  • 1 tbsp palm sugar or brown sugar
  • 1 can (400 ml) coconut milk
  • 2 kaffir lime leaves (or bay leaves if unavailable)
  • Salt to taste
  • ½ tsp black pepper

  • Cucumber and onion salad
  • Fried shallots for garnish

Directions

  1. Prepare the Marinade:

    • In a blender or food processor, combine garlic, shallots, ginger, turmeric, kecap manis, fish sauce (if using), palm sugar, coconut milk, salt, and pepper.
    • Blend into a smooth paste.
  2. Marinate the Chicken:

    • Place chicken pieces in a large bowl and pour the marinade over them.
