Ingradients

For the Cookies:
  • 1 cup (2 sticks / 227g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • 1 large egg yolk (save white for glaze or discard)
  • 1 tsp pure vanilla extract
  • 2¼ cups (280g) all-purpose flour
  • ¼ tsp salt
  • 2–3 tbsp granulated or powdered sugar (for rolling)
For the Filling:
  • ⅓ cup (80g) jam or preserves (apricot, raspberry, strawberry, or red currant)
  • Optional: 1 tsp lemon juice (to prevent jam from spreading)
Optional Glaze (for decoration):
  • ½ cup (60g) powdered sugar
  • 1–2 tsp milk or water
  • ½ tsp vanilla extract

Directions

  1. Preheat Oven:

    • Preheat oven to 325°F (160°C).
    • Line baking sheets with parchment paper.
  2. Cream Butter & Sugar:

    • In a large bowl, beat softened butter and sugar with a mixer for 2–3 minutes until light and fluffy.
  3. Add Wet Ingredients:

    • Beat in egg yolk and vanilla extract until smooth.
  4. Mix Dry Ingredients:

    • In a separate bowl, whisk together flour and salt.
    • Gradually add to butter mixture, mixing on low until just combined. Do not overmix.
  5. Chill (Optional but Recommended):

    • Cover dough and chill for 30 minutes (makes rolling easier and prevents spreading).
  6. Shape & Fill:

    • Scoop dough and roll into 1-inch balls.
    • Roll each ball in granulated or powdered sugar.
    • Place on baking sheets, 1½ inches apart.
    • Use your thumb, the back of a teaspoon, or a small spoon to press a well into the center of each.
    • Fill each well with ½ tsp of jam (don’t overfill — it expands).
  7. Bake:

    • Bake 12–14 minutes, until edges are lightly golden.
    • Centers will still look soft — they firm up as they cool.
  8. Cool & Glaze (Optional):

    • Let cool on baking sheet for 5 minutes, then transfer to wire racks.
    • Drizzle with powdered sugar glaze if desired.

  1. Buttery & Tender: Shortbread-like texture melts in your mouth.

  4. Freezer-Friendly: Dough or baked cookies freeze well.
  5. Kid-Friendly: Fun to make — great for holiday baking with children.
